Unlike most fig jams, which is made from dried figs, ours is made from fresh figs—so it is not so cloyingly sweet. Our jam simply relies on the honey-sweet quality of ripe Black Mission figs, which are regarded as a top quality varietal. Our figs come from an organically certified farm in Capay Valley, 90 miles east of San Francisco, which is committed to sustainable organic farming methods to improve its soil health and surrounding areas. Not only is there strict adherence to non-GMO materials and non-harmful spray or pesticides, even their tractors are run with vegetable oil and biodiesel fuels.
Fresh thyme, which comes from an organic farm in Pescadero, adds an aromatic note to our fig jam. The exact complementary blend of flavors produces a sensational sweet/savory taste to the palate.
